Birthday Plans


About 30 minutes ago I turned 24. This is how I plan on celebrating my birthday:

Morning-
• Gym
• Brunch & Coffee with my family at local coffee house

Afternoon-
• Try out the new watercolor set that Daina got me for Christmas
• Bake Red Velvet cupcakes with Mom
• Liddle-bit-of shopping with friends; amazing deals at the stores

Evening-
• Open cards & gifts
• Drinks & sushi with my ladies

I'm going to bed with a smile on my face just thinking about what a lovely day tomorrow might be.

Holiday Gift Idea Pt. 2

Last week I posted about wanting to give co-workers and friends hot chocolate and marshmallows in a jar for holiday gifts.  Well, last night Daina and whipped up (pun intended!) a few batches of fluffy goodness.  Below you'll see a picture of our vanilla-heath batch next to the cinnimon batch.


We also made a batch of our soon-to-be-famous peppermint marshmallows.  They have really been a hit with everyone who has tried them. Below you'll see how I packaged the goods.  Though Daina and I were hoping to have some sort of company set up by now to sell our marshmallows, we are still passionate about what we are doing.  Maybe sometime during this hopefully relaxing holiday season we will be able to organize ourselves and get our-legitimate-LLC-on. Maybe people will be in the mood to buy some sweet marshmallows for their sweets on Valentine's Day?

Fave Food Combos

Grilled cheese and tomato soup is probably one of my favorite food combinations of all time.  These two recipes look delicious and I bet that I'll feel almost healthy when I eat them too.  What more could a girl want in a meal?




3 cloves of garlic, minced
2 tablespoons of olive oil
2 - 14 oz. cans of crushed tomatoes
1 - 14 oz. can of whole tomatoes
2 cups of stock (chicken or vegetable)
1 tsp of sea salt
1 tsp of sugar
1/2 tsp of fresh ground black pepper
1/4 cup of heavy cream
3 tablespoons of fresh basil, julienned
parmesan cheese

In a saucepan, saute garlic in olive oil on medium heat for 1 minute - being careful not to burn the garlic. Add the crushed tomatoes.  Add the whole tomatoes one at a time, squeezing them into the pan to break them up. Add the juice from the whole tomatoes, as well.  Add chicken stock, salt, pepper and sugar.  Cook the soup on medium at a simmer for 10 minutes.  

To finish, reduce the heat to low and stir in heavy cream and basil.  Serve topped with parmesan cheese.


1 medium apple
1/2 cup grated low fat cheddar cheese
6-7 leaves spinach
1 tablespoons mayonnaise
1 tablespoons spicy brown or dijon mustard
1 tablespoon butter


Spread mayo and spicy brown mustard on whole wheat bread. Add 1/2 of your cheese, and spread evenly. Very thinly slice your apple and layer on bread, slightly overlapping. Top with a few layers of spinach leaves, and the remaining cheddar cheese. Top with your other slice of bread and seat aside. 

Heat medium pan over medium-high heat. Add half of the butter and spread in the shape of a slice of bread. Place sandwich on the butter and cover pan. Cook for 2-3 minutes or until bread is golden brown. Remove from heat, add remaining butter and replace sandwich on opposite side, cooking for another 2-3 minutes.

*Plans for tonight: Finish holiday gift shopping, hit the gym, then make this meal!

Nerdy Craft


Now I usually only get in to the holiday spirit on December 24th, but this craft idea is making me change my ways a little.  I am so excited to make this Star Wars Stormtropper snowflake! You can find instructions on how to make all kinds of Star Wars character snowflakes on these two websites: mattersofgrey.com and dancell.cwahi.net. Not quite sure what to do with it after I make it, besides giggle, but I'm sure that it will be totally worth it.

InstaFan

One of my new favorite things is the Instagram app on the iPhone.  It is essentially a photo-sharing social network, but even better than that, the application has several filters, frames, and other tools that you can use to edit your pictures, adjust the appearance of depth of field, and make them look even better.  The photos that I have added to this post are some of my favorites that I have taken. Find me @instafly!

Holiday Gift Idea Pt. 1


I love the idea of giving someone a gift in a jar. It's rustic but cute, simple yet thoughtful. This holiday season, I plan on giving out a few jars with hot coco mix and homemade marshmallows with candy cane pieces on top to co-workers and friends. My Video Has Almost 50,000 Views!


During this past summer, I went with my company to Quincy, MA to film an interview with photographer Gary Land.  I edited an entire video series on Land, but this video in particular has made me the most proud.  It currently has over 46,000 views on YouTube! This far exceeds anything I have ever worked on before.  And the best part is that most of the comments on the video are good ones :)  I have to give a lot of the credit on the success of this video to Mr. Lionel Messi, for being an internationally known all-star athlete who draws the crowds.

Mozzarella, Tomato, & Avocado Salad


Thanks to my sister Daina, I have a new obsession with the website Pinterest. Whilst scrolling through the pinboard, I came across this recipe for a Mozzarella, Tomato, & Avocado Salad that I am excited to make for dinner tonight.


Ingredients
1 container cherry tomatoes, cut in half
1 carton fresh mozzarella cheese pearls, drained
1 avocado, peeled and diced
1/3 cup basil, julienned
2 tablespoons fresh parsley
1/4 cup lemon juice
1/4 cup olive oil
salt and pepper
baguette-optional

1. In a large bowl, combine the tomatoes, mozzarella, basil and parsley. Set aside.
2. In a small bowl, whisk the lemon juice, oil, salt and pepper. Pour over tomato mixture. Toss to coat. Cover and refrigerate for 1 hour before serving.
3. Just before serving the salad, stir in the chopped avocados. Serve salad with toasty bread.

First Post

The two things I am focusing a lot of my energy on right now are getting organized and getting inspired.  I created this blog as a way to combine those two things; to organize my thoughts and to display things that inspire me.
I will be posting about current media projects that I am working on as a way to keep track of my work.  I will also be providing links to my recents videos and I would love to get feedback on these.  In addition, I plan on posting about the things that I want to try; recipes, crafts, adventures, etc.
